Mix Vegetable Curry

Ingredients 

2 - Potatoes (Aloo)
2 - Tomatoes (Timatar)
3 - Onion (Pyaaz)
1 - Aubergine (Baingun)
1 - Carrots (Gaajar)
1 cup - Sweet pumpkin (Meetha kaddu)
1 - Round gourd (Tinda)
1 cup - Bottle gourd (Lauki)
1 cup - Ridge gourd (Torai)
1 - Drumstick (Saijan ki phalli)
1 ½ tsp - Ginger garlic paste
1 tsp - Ginger (Adrak)
½ cup - Peas (Matar)
4 cups - Water (Pani) (For boiling vegetable)
1 tsp - Sugar ( shakkar)  (For boiling vegetable)
1 tbsp - Salt (For boiling vegetable)
½ cup - Oil (For curry)

Dry spices

1 ½ tsp - Red chili powder (Mirch powder)
½ tsp - Turmeric powder ( Haldi powder)
1 ½ tsp - Coriander powder (Light roasted) (Dhania Powder)
½ tsp - Asafoetida (Heeng)
1 tsp - Dry curry leaves OR Fresh curry leaves 
7 - Button red chillies
½ tsp OR as required - Salt (For curry)

For Tarka

¼ tsp - Carom seeds ( Ajwain)
¼ tsp - Cumin seeds ( Zeera)
¼ tsp - Fennel seeds ( Saunf)
¼ tsp - Mustard seeds ( Rai Black)
¼ tsp - Fenugreek seeds ( Methi dane)
